• 200gcaster sugar

• Zest of 2 medium lemons

• 2 large eggs

• 350g GF plain flour

• 2 tsp baking powder

• 1 tsp bicarbonate of soda/baking soda

• Pinch of salt

• 45g desiccated coconut

• 120ml coconut milk

• GLAZE

• 150g icing sugar

• 3 tbsp coconut milk

• 60g desiccated coconut

• Juice of 1 lemon

Garnish with coconut shavings and enjoy
