Pistachio, almond and orange cake

3 large eggs

1 cup icing sugar

1.5 tsp vanilla extract

Pinch of salt


Beat until fluffy

Add 2 cups of ground almonds

1.5tsp baking powder

Zest of 2 oranges

Mix well


Meanwhile....

Drizzle honey into a lined springform cake tin

Add crushed pistachios

Top with cake batter

Bake for around 30 mins at 170 (or until firm)


To serve..flip over and remove baking parchment.

Serve on it's own or with double cream or creme fraiche 😋
