Meaty meat-free lasagne 😁


Now I'm not a veggie but this totally hits all my lasagne boxes!


Ingredients


1 tablespoon olive oil

1 onion

1 carrot

1 stalk celery

Blitlz in food processor or grate

Sauté on low heat until soft


Add

3 cloves of garlic gratef

Œ teaspoon fennel seeds optional

2 heaped tsp dried oregano

1 level tsp dried parsley


Add

1 tablespoon butter

350 g of mushrooms sliced or blitzed

Sauté until moisture released

Add 2 tbsp tomato puree and

1 x 400 g cans of chopped tomatoes

Cook for 5 mins


Add

œ tablespoon balsamic vinegar

500 ml stock

1 teaspoon tamari

œ tablespoon Henderson's Relish

1 pouch Merchant Gourmet puy lentils

œ teaspoon freshly ground black pepper and salt to taste


Simmer on low for 50 mins to intensify flavours Check seasoning and then layer with bechamel sauce and lasagne sheets and cook at 170 for 40 mins ❀
