Dinner tonight

Summer salads don't have to be lettuce based. This little beauty is a meal in itself but you can serve it with some salmon or grilled chicken for a more substantial meal. Leftovers keep in the fridge for 2 days ❤️

Ingredients

1 head of broccoli

1 can chickpeas

4 spring onions

2 bell peppers

Dried cranberries (handful)

Toasted almonds (handful)

Fresh parsley and mint (to taste)


For the dressing

Half a cup of tahini

2 tbsp tamari

2 grated cloves garlic

2 tbsp lemon juice

2 tbsp maple syrup

Salt and pepper

Enough water to get the desired consistency


It really is amazing how good these raw veggies can taste. Give it a go 🤗🌞
