If you have a glut of courgettes then this is a great recipe. Easy to make and looks impressive. Great if you have a friend who can't have gluten, and your other friends will love it too
For the crust...
500ml hot, gluten-free vegetable stock
140g fine polenta
50g mature cheddar or other good melty cheese
1 medium egg, lightly beaten
For the topping...
1 tbsp olive oil
3 tbsp pesto (from a jar is fine)
2 courgettes, thinly sliced
4 garlic cloves, finely sliced
Handful of fresh basil leaves
25g mature cheddar
